Best Banana Bread Recipe


Ingredients

2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter
3/4 cup brown sugar
2 eggs, beaten
2 1/3 cups mashed overripe bananas

Directions

Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.

In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.

Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.

Bread Pudding Recipes


Ingredients:

2 cups whole milk
1/4 cup butter
2/3 cup sugar (white or brown, depending on taste preference)
3 eggs
2 teaspoons cinnamon
1/4 teaspoon ground nutmeg
1 teaspoon vanilla extract
3 cups bread, torn into small pieces (french bread works best)
1/2 cup raisins (optional)


Directions:

In medium saucepan, heat milk over medium heat just until film forms over top. Combine butter and milk, stirring until butter is melted. Cool to lukewarm.

Combine sugar, eggs, cinnamon, nutmeg, and vanilla. Beat with an electric mixer at medium speed for 1 minute. Slowly add milk mixture.

Place bread in a lightly greased 1 1/2 quart casserole.

Sprinkle with raisins if desired. Pour batter on top of bread.

Bake at 350F for 45 to 50 minutes or until set. Serve warm.

If you make the sauce to put on top of your bread pudding, adjust the sugar in the bread pudding recipe, change it to 1/3 cups sugar (the sauce has the other 1/3 cup in it).



Bread Pudding Sauce


Ingredients:

1 cup whole milk
2 Tbsp. butter
1/3 cup granulated white sugar
1 tsp. vanilla
1 Tbsp. flour
dash of salt

Directions:

Mix everything together and bring to a boil for 3 - 4 minutes, stirring constantly. Set aside for 5 minutes, then pour on warm bread pudding.

Pumpkin Nut Bread Recipe


Ingredients:

2 cups all-purpose flour
2 tsp baking powder
1/2 tsp baking soda
1 tsp salt
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1 cup cooked pumpkin
1 cup Equal Sugar-Lite
1/2 cup fat-free milk
2 eggs or 1/2 cup egg substitute
1/4 cup butter, softened
1 cup chopped hickory nuts or pecans

Instructions:

Preheat oven to 350 degrees. Sift together flour, baking powder, baking soda, salt, cinnamon and nutmeg. In mixing bowl, combine pumpkin, Equal, milk and eggs. Add dry ingredients and butter. Mix only until flour is moistened. Stir in nuts. Bake in a well greased 9x5x3-inch loaf pan or 65 minutes or until a toothpick inserted in the center comes out clean. Cool 10 minutes in pan then remove and place on a wire rack to cool.

Irish Soda Bread Recipe

If you've ever had the luxury to vacation in the countryside of Ireland, you no doubt recall the beautiful rolling hills, quaint little farms, and the most divine Irish soda bread you've ever had!

Ingredients

  1. 4-4.5 cups of whole wheat flour -- or a mixture of whole wheat flour and plain white flour
  2. Salt (1 teaspoon)
  3. Baking soda (1 teaspoon)
  4. Buttermilk (2 cups)
  5. Raisins (1 cup)
  6. Sugar (2 tablespoons)
  7. Butter (4 tablespoons)
  8. 1 Egg, beaten softly

Preparation

  • Pre-heat oven at 425 degrees. Mix together flour, salt, sugar, and baking soda in a large mixing bowl.
  • Use a knife or pie cutter to knead butter into the flour concoction. The texture should look like coarse meal. Add raisins.
  • Leave a hole in the middle of the flour mixture and then add the buttermilk and egg to this hole. Mix well with a wooden spoon. Continue until the dough is too firm to mix any longer.
  • Add a little flour to your hands and work the dough in the bowl enough to form a rough ball, but no more! Too much will work against it. Move the dough to a new surface coated with flour. Here you can mold it into a loaf.
  • Now slightly grease a skillet or a baking sheet and move the dough onto this. With a sharp knife, cut a cross or "X" shape about half an inch deep into the dough. Historically this is said to bless the bread!

Ingredients:

  1. 1/4 Teaspoonful of salt
  2. 2 Envelopes of instant yeast
  3. 1/4 Teaspoonful of extract cinnamon
  4. 1/2 Cup of Cocoa
  5. 4 Cups of flour
  6. 1/3 Cup of sugar
  7. 2 Tablespoonfuls of butter
  8. 1 Egg
  9. 1 Cup of very hot milk
  10. 1/2 Cup of warm water (or as much as is needed to get a dough that can be handled easily)
  11. 1 Cup of currents

Instruction:

  • Mix all the dry ingredients in a bowl
  • Melt the butter.
  • Beat the egg.
  • Mix the butter, egg, milk and water to form a soft dough that can be easily handled.
  • Knead the dough for about 1 minute.
  • Turn onto molding board, roll into a square about an inch in thickness and sprinkle on one-half cup of the currants.

Chicken tikka sandwich recipe



Ingredients

Chicken tikkas, chopped 8
White bread slices 8
Onion, chopped 1 medium
Green capsicum, chopped 1 small
Fresh coriander leaves, chopped 2 tablespoons
Green chutney as required
Chaat masala ½ teaspoon
Mayonnaise 2 tablespoons
Butter as required

Method

1.Mash the chicken tikkas in a masher. Add onion, green capsicum, coriander leaves, green chutney and chaat masala and mix.

2.Add mayonnaise and mix well.

3.Butter the bread slices on one side only. Spread the filling evenly over four slices and cover with another slice each.

4.Apply a little butter on the outer sides of the sandwich and place them one by one in the preheated grill. Grill till golden. Cut into triangles and serve immediately.

5.You can serve the sandwiches without grilling too. In that case trim the edges and cut into triangles and serve.

Indian Garlic Bread


Ingredients
4 cups bread flour
1 3/8 cups water
3 tablespoons olive oil
1 teaspoon finely minced garlic
3 tablespoons sugar
2 teaspoons salt
1/4 cup grated parmesan cheese
1 teaspoon dried sweet basil
1 teaspoon garlic powder
3 tablespoons chopped chives
1 teaspoon coarsely ground black pepper
2 1/2 teaspoons yeast



Method

1. In a large bowl, stir together yeast, water, and 1 teaspoon sugar. Keep it aside .

2. Add the remaining sugar, and rest of the ingredients along with the above yeast mixture in the bowl. Combine until dough forms, and then turn out on a floured surface. Knead until dough is elastic.

3. Grease a large bowl. Place the dough in the bowl, and cover the bowl with a damp cloth, and set aside in a warm place to rise for 30 minutes.

4. Divide dough in half. Shape into loaves, and place into two greased 8 1/2 x 4 1/2 inch bread pans. Again keep it aside to rise for 30 minutes.

5. Bake at 375 degrees F (190 degrees C) for 40 minutes.

Chapatti ~ Malaysia



The ingredients for this chapatti recipe are simple: flour, water, salt and oil, but it takes practice to make them just right.

Ingredients:
2 cups flour, sifted (Whole Wheat is traditional)
Cold water
Salt to taste
1 Tablespoon oil (for the mixture)
oil for frying

Put the flour in a bowl and add salt and oil and mix well. Slowly add the cold water and knead, making a soft dough. Cover with a damp cloth and set aside for 1-2 hours.

Divide the dough into 10 portions and roll each one into a round ball. Flour your working surface and roll each one into a round pancake about 5-6" in diameter. Shake off the excess flour and set aside until they are all done. You can also start cooking after the first one is dome. Heat an iron frying pan or Tawa on medium heat. Oil the pan and place the chapatti on the pan and cook for about a minute or bubbles start to appear and then turn over. The chapattis might puff up on their own or place over a gas flame for a few seconds. Place the chapattis between napkins until ready to be served. They are best served hot with chicken/mutton curry.
