Ingredients:
3 oz lemon gelatin
1 cup hot water
1 cup pineapple juice
1/2 cup tiny marshmallows
8 oz cream cheese
1 cup mayonnaise
A few drops food coloring
Cooking instructions:
Combine lemon gelatin in a cup water in double boiler, put in marshmallows and stir till it melts.
Take away from heat. Put in pineapple juice and cream cheese. Beat until it mixes together.
Cool it and add in mayonnaise. If you have a truffle candy molds or round ice cube tray, pour the mixture in the molds and put it in the freezer to set. Or else pour into a deep dish and chill until it is good enough for scooping into eyeballs.
Using a melon ball scoop, scoop out balls of the mixture and put to one side for decoration.
For decoration, use food coloring and draw creatively on them with a paintbrush. Use black, blue and green food coloring for the pupils and red for blood.
