Water Chestnut Chicken Patties Recipe



Ingredients:

200 g chicken meat (minced)
50 g water chestnuts (chopped)
Some corianders (chopped)
10 g Chinese mushrooms (cut into small dices)
1 stalk spring onions (chopped)
Cooking oil for deep fry

Seasonings A:

1 tsp salt
Some pepper (to taste)
1 tsp potato starch

Seasonings B:

100 ml water
1 tsp sugar
1 tbsp oyster sauce
Some pepper (to taste)


Cooking instructions:

Beat minced chicken, water chestnuts, corianders and 8g of Chinese Mushrooms with Seasonings A vigorously. Mould into balls then flatten them into patties.

Heat up a pan and pan-fry the patties till both sides turn golden brown.

Bring Seasonings B to a boil before thickening it with ½ teaspoon of potato starch. Put in 2g of Chinese mushrooms and the chopped spring onions and stir into sauce.

Serve the meat patties with the sauce.

Beansprouts With Mushrooms Recipe


Ingredients:

300 gms beansprouts
200 gms prawns — shelled and drained dry
3 stalks spring onions
2 cloves garlic — crushed
1 red chilli — sliced
3 tbsps oil
1 tsp salt
6 dried Chinese mushrooms soaked and sliced

Method:

1. Heat the oil to a high temperature and fry the crushed garlic until golden brown.
2. Add the prawns and carry on frying until they turn pink.
3. Add the beansprouts , mushrooms and spring onion and stir well.
4. Fry for half a minute or less.
5. Add salt to taste and serve garnished with sliced chillies.

Stewed Mushroom and Chicken Feet Recipe

Ingredients:

12 black mushrooms
2 tsps salt
1 tbsp vinegar
6 cups chicken stock
24 chicken feet
2 stalks spring onions
2 tbsps sliced ginger

Method:
1. Soak mushrooms in warm water. Drain and remove the stalks.
2. Clean the chicken feet and boil.
3. Mix well the chicken feet with chicken stock, vinegar, salt, spring onions and ginger.
4. Place in a steamer and steam for 30 minutes.
5. Add in the mushrooms and steam for another 20 minutes.
6. Serve hot with plain boiled rice.
