Mango Chicken Curry Recipe


Mango Chicken Curry Recipe

Ingredients :
Original recipe makes 2 servings

1 tablespoon vegetable oil
250 gram skinless, boneless chicken breast, cubed
1/2 cup chicken stock
1 tablespoon soy sauce
1 tablespoon cider vinegar
1 1/2 tablespoons brown sugar
1 teaspoon curry powder
1 tablespoon cornstarch
1/2 onion, diced
1 green bell pepper, sliced
1 red bell pepper, sliced
2 teaspoons minced fresh ginger root
1 mango, peeled and cubed
Directions

Heat vegetable oil in a large skillet over medium-high heat and stir in the chicken breast. Cook the chicken breast until no longer pink in the center.

Transfer cooked chicken to a plate. Meanwhile, whisk together the chicken stock, soy sauce, vinegar, brown sugar, curry powder, and cornstarch. Set aside.

Using the same skillet, cook and stir the onion over medium heat until the onion has softened and turned translucent, about 5 minutes.

Stir in the green and red bell peppers and cook for 2 minutes, then add the ginger and cook for another minute.

Stir in the chicken stock mixture and the cooked chicken breast. Cook until the sauce has thickened. Drop mango in and cook until the mango is heated through.

Butter Chicken Recipe


Ingredients 
Original recipe makes 4 servings

2 eggs, beaten
1 cup crushed buttery round cracker crumbs
1/2 teaspoon garlic salt
ground black pepper to taste
4 skinless, boneless chicken breast halves
1/2 cup butter, cut into pieces


Directions

Preheat oven to 375 degrees F (190 degrees C).

Place eggs and cracker crumbs in two separate shallow bowls. Mix cracker crumbs with garlic, salt and pepper. Dip chicken in the eggs, then dredge in the crumb mixture to coat.

Arrange coated chicken in a 9x13 inch baking dish. Place pieces of butter around the chicken.
Bake in the preheated oven for 40 minutes, or until chicken is no longer pink and juices run clear.

Baked Teriyaki Chicken Recipe

"A much requested chicken recipe! Easy to double for a large group. Delicious!"

Ingredients:
(6 servings)

1 tablespoon cornstarch
1 tablespoon cold water
1/2 cup white sugar
1/2 cup soy sauce
1/4 cup cider vinegar
1 clove garlic, minced
1/2 teaspoon ground ginger
1/4 teaspoon ground black pepper
12 skinless chicken thighs

Directions:

In a small saucepan over low heat, combine the cornstarch, cold water, sugar, soy sauce, vinegar, garlic, ginger and ground black pepper. Let simmer, stirring frequently, until sauce thickens and bubbles.

Preheat oven to 425 degrees F (220 degrees C).

Place chicken pieces in a lightly greased 9x13 inch baking dish. Brush chicken with the sauce. Turn pieces over, and brush again.

Bake in the preheated oven for 30 minutes. Turn pieces over, and bake for another 30 minutes, until no longer pink and juices run clear. Brush with sauce every 10 minutes during cooking.

General Tsao's Chicken Recipe

"A genuinely mouthwatering dish with an Asian kick that will knock your chopsticks off! Don't be fooled by other General Tsao impostors: this is simply the best Chinese chicken you will ever have. With a flair of peanut oil, a streak of sesame, a dash of orange, and a sweet spot for hot, this is sure to be a favorite. Just don't forget to deep-fry twice! Serve with steamed broccoli and white rice."

Ingredients:
(6 servings)

4 cups vegetable oil for frying
1 egg
1 1/2 pounds boneless, skinless chicken thighs, cut into 1/2 inch cubes
1 teaspoon salt
1 teaspoon white sugar
1 pinch white pepper
1 cup cornstarch
2 tablespoons vegetable oil
3 tablespoons chopped green onion
1 clove garlic, minced
6 dried whole red chilies
1 strip orange zest
1/2 cup white sugar
1/4 teaspoon ground ginger
3 tablespoons chicken broth
1 tablespoon rice vinegar
1/4 cup soy sauce
2 teaspoons sesame oil
2 tablespoons peanut oil
2 teaspoons cornstarch
1/4 cup water

Directions:

Heat the vegetable oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).

Beat the egg in a mixing bowl. Add the chicken cubes; sprinkle with salt, 1 teaspoon sugar, and white pepper; mix well. Mix in 1 cup of cornstarch a little bit at a time until the chicken cubes are well coated.

In batches, carefully drop the chicken cubes into the hot oil one by one, cooking until they turns golden brown and begin to float, about 3 minutes. Remove the chicken and allow to cool as you fry the next batch. Once all of the chicken has been fried, refry the chicken, starting with the batch that was cooked first. Cook until the chicken turns deep golden brown, about 2 minutes more. Drain on a paper towel-lined plate.

Heat 2 tablespoons vegetable oil in a wok or large skillet over high heat. Stir in the green onion, garlic, whole chiles, and orange zest. Cook and stir a minute or two until the garlic has turned golden and the chiles brighten. Add 1/2 cup sugar, the ginger, chicken broth, vinegar, soy sauce, sesame oil, and peanut oil; bring to a boil and cook for 3 minutes.

Dissolve 2 teaspoons of cornstarch into the water, and stir into the boiling sauce. Return to a boil and cook until the sauce thickens and is no longer cloudy from the cornstarch, about 1 minute. Stir the chicken into the boiling sauce. Reduce heat to low and cook for a few minutes until the chicken absorbs some of the sauce.

Water Chestnut Chicken Patties Recipe



Ingredients:

200 g chicken meat (minced)
50 g water chestnuts (chopped)
Some corianders (chopped)
10 g Chinese mushrooms (cut into small dices)
1 stalk spring onions (chopped)
Cooking oil for deep fry

Seasonings A:

1 tsp salt
Some pepper (to taste)
1 tsp potato starch

Seasonings B:

100 ml water
1 tsp sugar
1 tbsp oyster sauce
Some pepper (to taste)


Cooking instructions:

Beat minced chicken, water chestnuts, corianders and 8g of Chinese Mushrooms with Seasonings A vigorously. Mould into balls then flatten them into patties.

Heat up a pan and pan-fry the patties till both sides turn golden brown.

Bring Seasonings B to a boil before thickening it with ½ teaspoon of potato starch. Put in 2g of Chinese mushrooms and the chopped spring onions and stir into sauce.

Serve the meat patties with the sauce.

Zesty Mustard Chicken Recipe


Ingredients:

½ cup prepared mustard
½ cup honey
1 tablespoon salt-free seasoning blend
1 tablespoon Worcestershire sauce
1 broiler/fryer chicken, cut in half

Cooking Method:

In a bowl, combine the first four ingredients and mix well.

Carefully loosen the skin of the chicken; spoon some of the mustard sauce under the skin.

Coat grill rack with nonstick cooking spray before starting the grill. Place chicken skin side up on grill rack. Grill, covered, over indirect medium heat for 20 minutes.

Turn; grill 20-30 minutes longer or until juices run clear, basting occasionally with remaining mustard sauce.

Chicken Pastel Recipe (Filipino Recipe)


Ingredients:

1 whole chicken (1 ½ kg) cut in pieces
1 can (14 ounces) Vienna sausage, sliced
3 potatoes, diced
1 carrot, diced
1 cup mushrooms, cut in half
1 green bell pepper, sliced in strips
½ cup sweet peas
1 onion, minced
¼ cup grated cheese
1 cup margarine
2 cups chicken stock (broth)
½ cup evaporated milk
4 tablespoons soy sauce
1 lemon extract (juice)
1 egg, beaten
Salt and pepper to taste

Pie Crust
2 cups flour
½ cup corn oil or vegetable oil
1 teaspoon salt
¼ cup cup of water


Cooking Instructions:

In a bowl, marinate chicken lemon juice and soy sauce for an hour. In a skillet, melt margarine and brown chicken, set aside.

Sauté onion, bell pepper an mushrooms then add chicken broth. Simmer for 15 minutes then add potatoes, carrots, sweet peas, sausages, grated cheese and milk. Continue cooking for 10 minutes. Salt to taste.

Transfer to a baking dish. Pre-heat oven to 450 degrees Fahrenheit. On a bowl, combine the flour, salt, cold water and oil. Mix into a ball. On a flat surface, roll flat the pastry and cover the chicken pastel mixture and seal the sides by pressing on the edges. Remove excess pastry.

Punch small holes on the pastry to let out steam during baking then brush with beaten egg.Bake until golden brown (about 15 minutes).

Thai sticky chicken recipe


Ingredients:

1.3kg chicken, drumsticks and thighs
2 red Chillies, seeds removed and chopped
2.5 cm piece of root Ginger, roughly chopped
5 cloves Garlic, roughly chopped
1 stick Lemon grass, outer skin discarded, roughly chopped
2 tbsp soft light or dark brown Sugar
2 limes, juice only
3 tbsp Fish Sauce
15gm Coriander, (stalks and leaves), roughly torn, plus a few extra leaves to serve


Cooking Method:

1. Cut slashes in the chicken drumsticks and thighs using a sharp knife. Place them in a wide bowl or large food bag.

2. Place the remaining ingredients in a food processor and blend to a rough paste. Alternatively, pound the chillies, ginger, garlic, lemon grass and coriander using a pestle and mortar and then stir in the sugar, lime juice and fish sauce and pour over the chicken, tossing to coat.

3. Cover the bowl with cling film or seal the bag and leave to marinate in the fridge for a few hours, or overnight if possible, tossing occasionally. Preheat the oven to 220C/gas 7.

4. Remove the chicken from the fridge about 30–40 minutes before cooking to bring to room temperature. Remove the chicken pieces from the marinade (reserving the marinade) and arrange in a single layer in a roasting tin. Roast in the oven for 35–40 minutes or until the meat is coming away from the bone.

5. Arrange the chicken pieces on a warm serving platter and place the roasting tin on a medium heat on the hob. Pour in the reserved marinade and bring to the boil. Reduce the heat and simmer for a few minutes, stirring with a wooden spoon and scraping the sticky bits from the bottom, until thickened and sticky. Pour the sauce over the chicken, scatter with coriander leaves. Ready to serve.

Chicken in Tomato Sauce Recipe


Ingredients:
1 chicken
30 dried red chillies
5 cloves garlic
2 large onions
2 tomatoes
1 cup tomato sauce
1 tbsp sugar
5 cm piece ginger
1 star anise
2 cm piece cinnamon stick
½ cup oil
2 cups thick coconut milk - from 1 grated coconut
2 cups green peas
3 cloves
2 tsps turmeric powder
Salt and sugar to taste
Cooking oil

Method:
1. Clean the chicken and cut into bite-sized pieces. Drain and mix well with salt and turmeric powder.
2. Heat oil in a deep pan and fry the chicken pieces until crispy.
3. Grind the dried chillies until fine. Pound coarsely the shallots and ginger.
4. Heat 3 tbsps oil and fry the ground chillies, pounded shallots and ginger, cloves and star anise.
5. Add coconut milk and bring to boil.
6. Add tomato sauce, sugar, salt and cinnamon. Stir constantly.
7. Add in the fried chicken pieces. Simmer for 5 minutes.
8. Add . in the sliced onions and tomatoes and green peas.
9. Turn the chicken pieces to mix well with the gravy.
10. Serve hot with steamed rice.

Spicy Grilled Chicken Recipe – Malaysian Style


Ingredients:
1 whole chicken
5 cloves garlic
4 cups coconut milk — extracted from 1 coconut
1 tsp coriander seeds
1 tbsp tamarind pulp
3 hard-boiled eggs
Salt to taste
Chicken liver and gizzard

Method:
1. Clean the chicken well and drain.
2. Pound or grind the garlic and coriander seeds finely.
3. Slice finely the chicken innards and mix with 1 tsp of the ground ingredients.
4. Chop the eggs roughly and add to the mixture. Stuff the chicken with the mixture and sew up the opening.
5. Squeeze out the milk from the coconut, mix with tamarind and salt. Add in the remaining ground ingredients.
6. Boil the chicken in this mixture until the oil surfaces. Take the chicken out of the pot and grill it in the oven until tender.

Served with grilled carrots as side dish.

Steamed Chicken Recipe – Malaysian Style


Ingredients:
1 chicken
1 cm piece fresh turmeric
1 cm piece ginger
2 cm piece galangal - crushed
1 stalk lemon grass
2tsps coriander seeds
1 tsp cumin
3 cloves garlic
6shallots
1 tsp sugar
Salt to taste

Method:
1. Clean the chicken and cut into 4. Wash well and drain.
2. Grind all the ingredients together except the galangal.
3. Rub the galangal and ground ingredients all over the chicken. Set aside for 30 minutes.
4. Place in a steaming tray and steam until the chicken is tender.

Devilled Chicken Wings Recipe



Ingredients:

750 gm chicken wings
Flour
1 tsp ground ginger
4 stalks celery
2 tbsp thick soy sauce
1 tsp black peppercorns - ground fine
6 cloves garlic
½ cup vinegar
Salt to taste
1 cup brown sugar - loosely packed
1 tbsp corn flour
½ cup water
Cooking oil

Method:
1. Coat chicken wings in flour seasoned with salt, pepper and ginger.
2. Heat oil in a pan and sauté chicken wings until well browned, reduce heat and continue cooking till tender.
3. Heat a little oil in a saucepan and fry garlic till golden.
4. Add celery which has been sliced, soy sauce, vinegar, corn flour, brown sugar and ½ cup water.
5. Stir over gentle heat till sugar dissolves, and then bring to the boil.
6. Reduce heat and simmer for 2 minutes.
7. Add chicken wings and heat through before serving.

Satay Kajang and Peanut Sauce Recipe


Satay Kajang Recipe
Ingredients:
1.5 kg chicken — deboned
1 tsp cumin
½ tsp powdered cinnamon
8 shallots
1 tsp coriander
2.5 cm piece fresh turmeric
1 tsp sugar
1 stalk lemon grass
2 tbsps roasted peanuts
Salt to taste
2 tbsps cooking oil

Method:
1. Cube the chicken meat, drain and put aside.
2. Grind coriander, cumin, turmeric, peanuts, salt and sugar. Mix this with the powdered cinnamon, diced shallots and 1 tbsp cooking oil. Marinate the chicken with this mixture.
3. Using special skewers, skewer 5 pieces of meat on one skewer, as in Kebabs.
4. Grill over burning coal, constantly sprinkling cooking oil over the meat using crushed lemon grass.
5. Turn over and continue grilling until the chicken is cooked.
7. Serve with peanut sauce.


Peanut Sauce Recipe
Ingredients:
300.gms peanuts - roasted
2.5 cm piece ginger
A piece of galangal
3 tbsps pounded chillies
2 stalks lemon grass
1 cup sugar
1 bombay onion
½ cup tamarind juice
Salt to taste

Method:
1. Grind the roasted peanuts coarsely. Put aside.
2. Grind lemon grass, ginger and galangal until fine.
3. Slice bombay onion and stir fry until soft.
4. Add in ground chillies and the other ground ingredients.
5. Add in tamarind juice and lastly peanuts, sugar and salt. Simmer until the gravy thickens.
6. To serve, arrange a few sticks of satay on a plate and serve with a bowl of peanut sauce, cucumber and sliced bombay onion. Satay also goes very well with compressed rice.

Chicken Vindaloo Recipe


Ingredients:
1 medium chicken — cleaned and cut into pieces
1 large onion — sliced
10 shallots - grind
1 tbsp mustard seeds
1 tbsp cumin
20 dried chillies - grind fine
1 small piece turmeric - grind fine
6 cloves garlic - grind
2.5 cm piece ginger - grind
2 sprigs curry leaves
Vinegar to taste
Salt to taste
2 tbsps oil

Method:
1. Heat oil in a deep pan and put in mustard seeds.
2. When seeds crackle add the sliced onions and fry till golden.
3. Add ground spices and fry for a few minutes.
4. Add chicken and curry leaves and stir well, frying till the chicken is well coated with the spices.
5. Reduce heat and simmer till chicken is tender.
6. Add vinegar and salt to taste, and cook for a few more minutes over low heat before dishing out.

Shredded Chicken with Pandan Leaves Recipe


Shredded Chicken with Pandan Leaves

Ingredients:
3 chicken drumsticks — shredded
3 screwpine leaves (pandan)
1 large piece ginger
½ tsp coriander seeds — ground
½ tsp aniseeds — ground
½ tsp sugar
1 tsp salt
1 tsp ground pepper
2 tbsps thick coconut milk
3 tbsps oil

Method:
1. Grind or pound the ginger and extract the juice.
2. Season chicken with ginger juice, ground coriander, aniseed, salt, sugar and pepper for half an hour.
3. In a pan, heat the oil and fry the screwpine leaves until fragrant.
4. Add in the seasoned chicken and cook until it is tender.
5. Add in the thick coconut milk and stir-fry till gravy thickens.
6. Serve hot with plain boiled rice.

Yogurt Baked Chicken Recipe


6 oz. plain yogurt
1 tsp. salt
2 tsp. Worcestershire sauce
1/2 tsp paprika
1/4 tsp. Tabasco sauce
1/4 tsp. garlic powder
24-28 chicken wings/any chicken parts
1 cup dry bread crumbs

Heat oven to 350 degrees. Use a baking pan and grease it lightly. Mix yogurt, salt, Worcestershire sauce, paprika, Tabasco sauce and garlic powder together. Dip chicken in mixture, roll in dry bread crumbs. Place wings in the baking pan and bake uncovered for 60 minutes.

Stewed Mushroom and Chicken Feet Recipe

Ingredients:

12 black mushrooms
2 tsps salt
1 tbsp vinegar
6 cups chicken stock
24 chicken feet
2 stalks spring onions
2 tbsps sliced ginger

Method:
1. Soak mushrooms in warm water. Drain and remove the stalks.
2. Clean the chicken feet and boil.
3. Mix well the chicken feet with chicken stock, vinegar, salt, spring onions and ginger.
4. Place in a steamer and steam for 30 minutes.
5. Add in the mushrooms and steam for another 20 minutes.
6. Serve hot with plain boiled rice.

Healthy Chicken and Vegetable Soup Recipe


Ingredients:

3 Chicken breasts - cut into cubic pieces
2 Onion spring - chopped
2 small Carrot - chopped
1 clove Garlic - chopped
8 cups (2 liters) Chicken broth
2 Bay leaves
2 tbsp Cilantro- chopped
100-120 gram Noodle
1 cup Green pea - cooked
2 tbsp Olive oil
2 tsp Cumin
1/2 cup Corn - cooked (optional)
1/2 cup Soy beans - cooked (optional)
Parsley to decorate (optional)
2 tbsp Lemon juice (optional)
Salt and Pepper to taste


Directions:

1. Saute garlic with carrots and onion springs in olive oil for 5 minutes.

2. Add chicken and cilantro. Season with cumin, salt and pepper and saute for 5 minutes or until chicken turns white.

3. Add chicken broth, corn, soy beans and bay leaves. Bring to boil and cook for 10 min.

4. Add noodle and cooked green peas and continue cooking until noodles are done.

5. Decorate with parsley and serve with lemon juice.

Crockpot Chicken Tacos Recipe



Ingredients:

6 boneless, skinless chicken breasts
A chopped onion (optional)
A chopped green pepper (optional)
1 packet taco seasoning
16 ounces salsa (that's 2 cups if you're using a larger bottle).
Flour tortillas, corn tortillas, or taco shells
Toppings: your choice of lettuce, sour cream, grated cheese, tomatoes, salsa, olives, guacamole, etc.


Instruction:

  • Put the chicken in a Crockpot. Add the onion and pepper if you want.
  • Mix the seasoning with salsa and pour over chicken. You can add some more water if you think it needs more liquid, but the salsa and the chicken will produce ample liquid as it cooks.
  • Cover and cook on high for 4 to 6 hours or low for 6 to 8 hours.
  • The chicken is done when it can be shredded easily with a fork.
  • Lift the chicken out and shred it with a fork.
  • Serve with soft flour tortillas, a spoonful of the veggies if you used them (lift them with a slotted spoon to drain out excess liquid), and your favorite toppings. Try any combination of lettuce, sour cream, shredded cheese, and tomatoes.
