Ayam Masak Merah (Chicken in Red Sauce) ~ Malaysia




Ingredients

1 whole chicken, cut into 8-10 parts, skinless preferably
2 tsp turmeric powder
salt to taste
Coking oil for deep fry
5-6 tbsp chilli paste
2 tbsp sugar
4-5 tbsp ketchup (tomato sauce)
2 stalks lemongrass (serai)
2cm ginger
7 shallots
4 pips garlic
2 big onions (Cut crosswise into rings)



Method
1. Rub chicken pieces with turmeric powder and salt thoroughly. Heat cooking oil in a wok. Deep fry chicken until cooked. Drain and leave aside.

2. Grind or pound ginger, lemongrass, garlic and 5 shallots and add to chilli paste.

3. Heat five tablespoons cooking oil in a wok. Fry two sliced shallots until fragrant and add chilli mixture. Mix well until the chilli paste cooked.

4. Add ketchup and a little water if necessary. Add sugar and salt (use dicretion here as the chicken pieces already contain salt). Mix well.

4. Then add in chicken and onion rings, mixing thoroughly.


Good to eat with plain rice.
