Fish with Tomato Sauce Recipe


Ingredients:

4 white fish fillets
1 tbsp cooking oil
1-2 garlic clove (crushed)
1 small capsicum finely chopped
1 medium sized onion finely chopped
500 gms tomatoes finely chopped
Salt & pepper to taste
1 tsp sugar
1 tsp chili sauce
½ cup water
lemon juice ½ tsp
1 tbsp finely chopped green coriander
Preparation:


Heat oil in large pan, add garlic, capsicum & onion. Cook over medium heat
for 10 mins or until soft stirring occasionally. Add tomatoes, salt & pepper
sugar and chili sauce. Reduce heat to low and cook for 10 mins or until the
sauce has reduced and thickened. Add water and stir until hot.

Place fish over sauce in a single layer. Season with salt, pepper & lemon
over cooking pan and cook on medium heat for 5 mins then sprinkle coriander and
serve hot with salads or boiled rice
