Spicy Fried Prawns Recipe
500 gms medium sized prawns — shelled and divined
4 shallots - a
2 cloves garlic - b
3 cm piece ginger - c
1 cm piece turmeric – d (a,b,c & d pounded together)
1 large onion — sliced
1 cup thick coconut milk — extracted from ½ grated coconut
1 tbsp curry powder — mix well with 1 tbsp water
1 sprig curry leaves
1 tbsp oil
Salt to taste
Heat oil and fry the pounded ingredients until fragrant. Add in curry leaves.
Add in curry powder and stir until fragrant, making sure it does not burn.
Add in the sliced onion and coconut milk. Bring to boil.
Add in the prawns and cook until done.
Serve hot with plain boiled rice.
